Bhindi
Ingredients:
- 3-4 chopped green chilis
- Half a diced white onion
- 150g of bhindi (okra)
- 2 tbsp of ground roasted peanuts (peanut butter works as well)
- Wash, thoroughly dry, and chop the bhindi
- Heat 1.5 tbsp of vegetable oil at medium heat
- Once hot, add 1/4 tsp cumin and 1/8 tsp asafoetida
- Once splattering/browned, add the chopped chili
- Wait a little, add the onion
- Increase heat to high
- Fry for a couple of minutes until slightly browned
- Add 1/4 tsp turmeric, bhindi, and 1/2 tsp salt
- Turn heat down to medium/low
- Cook for a good long while, like 20 min
- Don’t stir too much or add any water, it’ll get slimy
- It’ll get slimy anyway, but back to normal near the end
- If the bhindi is hard, cover and steam a little
- If it’s too slimy, add a few drops of lemon juice or some chaat masala
- Once bhindi are soft and cooked, add
- 1 tsp coriander powder
- 1/4 tsp garam masala
- 1/4 tsp kala masala
- 1/4 tsp chaat masala
- red chili powder to taste
- Increase heat to medium high and cook
- Once cooked to golden, add peanut powder/butter and stir
