Gobi

(Meaning cauliflower)

Ingredients:

  1. Heat 3 tbsp of vegetable oil
  2. Add 1/2 tsp of cumin seeds, 1/4 tsp of asafoetida and wait till splattering
  3. Add garlic, then ginger, then chillis
  4. Stir fry for a bit
  5. Add chopped onion, half tsp of salt
  6. Stir fry till light brown, and cover the onions if they’re too dry
  7. Add chopped tomatoes (and 2 bay leaves)
  8. Wait till tomatoes are cooked (mushy)
  9. Add 1/4 tsp turmeric
  10. Add chopped cauliflower
  11. Cover and cook till tender
  12. Add 1/4 tsp powdered fennel seeds and 1/2 tsp garam masala
  13. Add chopped coriander to taste
  14. Cover and cook for a minute or so
