Paneer Bhurji

For three people

Ingredients:

Medium heat throughout

  1. Heat 3 tbsp of vegetable oil
  2. Add 1/2 tsp cumin seeds and wait till splattering
  3. Add onions, chillis, and 1/2 tsp of salt
  4. Wait till slightly browned, and cover the onions if they’re too dry
  5. Add chopped tomatoes
  6. Cover and cook, stirring, till the oil separates a little (not too dry)
  7. Add 1/4 tsp of turmeric, 1/4 tsp of garam masala
  8. Add chopped coriander to taste
  9. Cook and stir for a minute
  10. Add grated paneer, and 2 tbsp of water
  11. Steam for a couple of minutes very low heat
