Paneer Bhurji
For three people
Ingredients:
- 2 onions, chopped
- 2 tomatoes, chopped
- 3 green chillis, chopped
- Small pack of paneer (Dairy Valley or Shagun)
Medium heat throughout
- Heat 3 tbsp of vegetable oil
- Add 1/2 tsp cumin seeds and wait till splattering
- Add onions, chillis, and 1/2 tsp of salt
- Wait till slightly browned, and cover the onions if they’re too dry
- Add chopped tomatoes
- Cover and cook, stirring, till the oil separates a little (not too dry)
- Add 1/4 tsp of turmeric, 1/4 tsp of garam masala
- Add chopped coriander to taste
- Cook and stir for a minute
- Add grated paneer, and 2 tbsp of water
- Steam for a couple of minutes very low heat
