Thai Red Curry
Ingredients:
- In the curry:
- Broccoli, carrots, and mangetout
- Baby corn and green beans
- Mangetout and sugarsnap peas
- Bamboo
- Tofu
- Pak choi
- Onions
- Peppers
- 2 chopped garlic cloves
- 2 tsp thai red curry paste
- 1 can coconut milk (Aroy-D or Natco)
- Chopped red chilis
- Basil leaves and lime
- Cook all of the above and set aside (in the suggested pairings)
- Heat 1 tsp of oil, and add garlic and thai red curry paste
- Stir fry on low for a minute, don’t change the colour of the paste
- Add coconut milk and cooked vegetables
- Add basil leaves and lime to taste
- Add chopped red chilis
