Apple Cake
Makes 12 servings.

Ingredients for the cake:
- 312g all purpose flour
- 300g light brown sugar
- 1.5 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp nutmeg
- 240ml buttermilk
- add 1 tbsp lemon juice to 240ml milk, leave for a minute
- 80ml vegetable oil
- 1 tsp vanilla extract
- 1 tbsp apple cider vinegar
- 2 tbsp applesauce/butterscotch
- 188g peeled and chopped red apples
For the topping:
- 100g white sugar
- 1 tsp ground cinnamon
- 1 tbsp softened unsalted butter
- Preheat oven to 160°C
- Sift and mix the following:
- flour
- brown sugar
- baking soda
- salt
- cinnamon
- nutmeg
- Add and mix the following:
- buttermilk
- oil
- vanilla
- apple cider vinegar
- applesauce/butterscotch
- Fold in the chopped apple
- Transfer to a cake tin
- For the topping, mix the cinnamon and sugar in a separate bowl
- Then combine with the softened butter until crumbly
- Sprinkle over the cake
- Bake for ~45 min or until a knife comes out clean
